Founded in Lambersart in 1903, La Laiterie is a prestigious institution managed by Edouard Quickly bitten by the cooking bug, Edouard Chouteau, originally from Brittany, was immersed in the atmosphere of the family hotel-restaurant from a very young age. It was therefore quite natural that he adopted the profession of cook, learning his skills with the greatest French chefs: Pierre Gagnaire, Eric Fréchon, Alain Passard, Christophe Pelé and Mathieu Pacaud with whom he worked as a chef in the kitchens of the Le Pavillon de la Reine hotel, Place des Vosges in Paris. It is now in Lambersart that Edouard Chouteau practices his art. At La Laiterie, he delights the eyes and taste buds through authentic, inventive and passionate cuisine. He chooses his products from quality suppliers. Essentially regional, organic and always seasonal, the exceptional products are revealed between tradition and modernity in daring combinations of tastes. This beer worked between Edouard and Henry was brewed with only ingredients from Hauts-de-France, notably chicory from the Lutun house, 4th generation in Oye plage since 1934.
