We have developed this recipe with a rich malty base, enhanced by spicy / subtly peppery aromas. A generous hopping offers a beautiful bitterness with herbaceous and flowery accents. A slight hint of acidity, typical of the genre, gives a nice balance to our family interpretation of the SAISON. The 10th generation Motte-Cordonnier is pleased to introduce you to Fernand (1895-1980)! Farmer at the chapel of Armentières, an army hamlet, he came to collect spent grains from the old brewery. Stéphane, who collects our spent grains today, is its great-grandson! The SAISON is a style of historic top-fermented farmhouse beer, which originates from Hainaut and the Ardennes. This beer, which made the brewing legend of these territories, was brewed in winter with the remains of the cereal harvest. Renowned for its beautiful sparkle and its dry, thirst-quenching finish, the Saison watered down the seasonal workers who came to work in the fields. We tend to say that the brewer brews the wort and the yeast makes the beer. The taste specificity of the Saison style comes precisely from the very expressive aromas of the yeast!
