Chai spiced almond butter

This is probably our most unusual nut butter and unique to us (as yet!) The word "chai" is thought to have originated in China or Persia and simply means tea, however over the years it has become synonymous with the mixture of tea leaves, milk, health giving spices and sweetener known in India as Masala Chai, the warming, aromatic drink that inspired the flavour of this nut butter. Cinnamon, ginger and cardamom work in synergy to create an aromatic almond butter that's delicious stirred into hot porridge or overnight oats, spread onto warm toast or baked into crumbly biscuits. I took a long time in the test kitchen perfecting the balance of spices for this recipe as just a few grains of Cardamom too many can completely overpower the other spices. The star of this show is the cinnamon, which works as a natural sweetener, enhancing the flavour of the roasted almonds. Cinnamon is well known for it's incredible health giving properties, one of which is the ability to lower blood sugar levels. Almonds have also been proven to reduce the rise in blood glucose and insulin levels after a meal, so the combination of both packs a serious health punch. Storage: No need to refrigerate….store in a cool, dry place, once open eat within 3 months, Oil separation is natural, just give me a stir!
