Aging in barrels: Wishing to explore the paths of excellence and the unexpected, we refine some of our beers (LA DIX, WAL and N° NOIR) in barrels – also called “foudres” – for at least 6 months . The barrels come from aging Rum, Cognac, Armagnac, Whisky, Bourbon, Peated Whiskey, Sauternes, Port, Saint-Emilion or Pessac-Léognan. We naturally named them “Coup de Foudre”.
