A vintage marked by the April frost. The harvest is meager with 3hl of yield. Hand harvested in boxes between September 10 and 23, 2021. Blend of old Sémillon, Sauvignon Blanc and Sauvignon Gris from two terroirs: sandy Peyron for the Sauvignon Blanc, serious Bouché for the Sémillon and Sauvignon Gris. Slow pressing then settling for 24 hours at 12°C before barreling into two 500L barrels, with very gentle heating, and into an amphora. Alcoholic fermentation with natural yeasts and malolactic in barrels on lees. Light stirring at the end of the malo. Unfiltered, unfined. Bottling in September 2022
