It's a versatile ingredient made with care from Rwandan-grown Scotch Bonnet chillies, Hampshire cider vinegar, and a pinch of sea salt that can spice up all kinds of dishes. What started as our very first product has turned into a beloved staple over the last six years as we've perfected our recipe. Our puree is a key ingredient in countless chilli sauces across the UK and is a favourite among caterers and restaurants looking to add zest to their menus. How We Create Our Scotch Bonnet Puree The story behind our Scotch Bonnet Puree begins in the vibrant chilli fields of Rwanda, East Africa. Here, the chillies thrive in open farming conditions, with many organic practices at play. Our dedicated team carefully harvests the peppers and brings them to central Kigali for processing. In our modest facility, our passionate Rwandan staff sort through the chillies, ensuring that only the best make it into our puree. The chillies are then minced and mixed with salt, and over the next few weeks, they undergo a natural lacto-fermentation process in barrels. This develops a deliciously tangy flavour while helping to preserve the peppers. Once they're all ready, we transport the barrels to the UK to continue the fermentation process for a bit longer in our chiller. The final step is in our kitchen in Portsmouth, where we add cider vinegar and pasteurize the mixture. The result? A product made from pure, straightforward ingredients—no artificial preservatives or additives here!
