Certified by FLO-Fairtrade (Fair Trade) and by CAAE (Aragonese Council for Ecological Agriculture). NOTE: These cacao nibs are not roasted but, like all cacao nibs for sale, they are fermented. In the fermentation process, which takes place in the country of origin, the cocoa reaches temperatures of up to 50ºC. Therefore, although it has not been roasted, it has been fermented in order to develop aromas, flavors and lower its level of acidity and astringency. In order to achieve greater food safety, we strongly recommend roasting it at a temperature of around 120ºC and thus not losing the natural aromas that this cocoa contains.
