The lentils are collected by the cooperative of organic producers Corab. They are grown in the following departments: Charente (16), Charente-Maritime (17), Deux-Sèvres (79), Vienne (86), Haute-Vienne (87) and Dordogne (24). These legumes are rich in fibre, minerals and vegetable proteins, which help aid digestion. In addition to stimulating satiety, they help fight against excess cholesterol and prevent cardiovascular disease. Lentils are also an important source of vitamin B and have antioxidant power. Unlike green lentils, this legume has a thinner skin and is more tender in the mouth. They are readily eaten in the form of soup or as an accompaniment with vegetables, fish or meat. Preparation tips: rinse the lentils in cold water and place them in a saucepan with 3 times their volume of cold unsalted water. Bring to a boil and simmer covered for 20 to 25 minutes. Allow 1 volume of lentils for 3 volumes of water.
