Bittersweet vinegar made with Pedro Ximénez wines, with a high layer of jet color with amber and iodized rims that leave the glass stained. Dense in its movement in the glass. In the mouth it is wide, and very balanced, the aftertaste being powerful again, a direct witness of its old age since its aromatic persistence is very long. Ideal for salads with goat cheeses, also for making sauces and foie gras, not to mention a few drops in some good lentils. With Parmesan, hard, spicy cheeses, it's just great.
