Organic extra virgin olive oil

Château la Dorgonne has more than 2,800 olive trees grown on 8 hectares of land. We have 3 varieties of olives: 3/5 of Aglandaux, 1/5 of Bouteillans 1/5 Pitcholines. The soil is regularly worked to allow its aeration and facilitate drainage. Trees are pruned each year to stimulate their development and promote production. The olive trees are regularly treated with Bordeaux mixture (4 annual treatments). Under these conditions, they are better equipped to fight naturally against the multiple attacks of insects and parasites. The olive grove also requires a lot of care and attention. At Château la Dorgonne, olive picking is done by hand. After cleaning and leaf stripping, the olives are placed in openwork 30kg crates. Every two days, the harvest is brought to the mill where the olives are quickly ground in the old fashioned way under a large stone wheel. The olive paste is then placed on woven baskets called scourtins. These scourtins stack up to be placed in the press. Once activated, the press crushes the mats on top of each other to extract not only the oil but also the water contained in the olive paste. The liquid thus obtained is evacuated in a centrifuge which will separate the water from the oil. Then, the olive oil is stored to stabilize and decant for a few months before bottling. Our production of olive oil is unfiltered.
