White Pepper from Penja

Penja white pepper is a spice distinguished by its sweet and refined fragrance, offering tangy and slightly spicy notes. Unlike black pepper, it is less spicy but has an impressive length in the mouth. Food enthusiasts appreciate its earthy flavor, potency and lingering acidity, making it a popular ingredient for creative cooking.  Originally from the Penja region in Cameroon, this pepper is the first African product to have obtained the Protected Geographical Indication in 2013. É also known as “bird pepper,” “hidden pepper,” and “treasure of Cameroon,” it is obtained from the Piper Nigrum vine and is produced by hand to guarantee its quality. Harvested by hand at full maturity, then the beans are immersed in volcanic spring water to develop their natural white color.  After being freed from its pericarp, the pepper is crushed and left to dry, then the large grains are sifted to obtain white Penja pepper. It is slightly less spicy than black pepper, with an estimated level of 6 out of 10 on the Scoville scale.  Penja white pepper has several health benefits thanks to its piperine, which promotes nutrient absorption and acts as an anti-inflammatory. It is also used to treat canker sores and mouth sores.  In cooking, it goes well with red meats, poultry, salads, grills, marinades, seafood, vegetables and cheeses. As a grand cru pepper, it enhances the taste of dishes, adding a special touch to many recipes. To fully enjoy its unique taste, it is best to add it at the end of cooking, in powdered or crushed form, measuring it according to individual preferences.
