We are the Cubero-González family, David and Nuria, and our two sons. We are a couple of veterinarians, breeders of 100% pure Iberian breed pigs, and Pata Negra ham and Iberian charcuterie refiners. For more than 45 years our family and professional project of our small family business (IBESUREX) aims to preserve the Iberian pig in its natural environment (the Dehesa de Extremadura), to raise it and to transform it according to traditional know-how. But at Ibesurex we go a little further, in particular our hams have a minimum ripening of 48 months. We even found a very old method of preserving the acorn that we use in a very special project.
