Natural crust The LAUBURU/ZYRAX cheese dairy offers you uncooked pressed cheese products made by craftsmen using old-fashioned processes. Their specialties are sheep tommes, goat tommes, cow tommes and some of milk mixed with or without natural flavoring with spices from 0.900 kg to 12 kg. They still work with a pre-pressing tank where the cheese is pressed in its whey, which gives it a tasty and creamy taste, and gives its suppleness to the dough. The cheeses are salted by hand with Salies salt.
