ÄSimilar to Grappa or Marc, it is based on the solid residues of wine production. In northern Spain, Orujo has been widespread for centuries and is firmly anchored in the regional distilling culture. ​ Production and Basis This clear liquor is obtained by distilling the solid components of the wine mash. The aromas of peels, seeds and pulp are retained. The result is an uncoloured spirit with a strong expression, produced according to traditional methods. ​ Use and Drinking Method Orujo is traditionally served neat – slightly chilled at 8 to 10°C – preferably in a grappa glass. In Galicia, it is also used to prepare Queimada, a spirit mixture with sugar and citrus peel, which is served hot and flambéed.
