High quality Italian Linden honey, unpasteurized to enhance and bring out all its sweetness and natural genuineness.​ Linden Honey boasts notable beneficial properties, performing antispasmodic and liver-protective activities and is often used as a soothing agent to combat anxiety and the disorders that derive from it. ANDparticularly suitable for those who suffer from insomnia.​ Light color with bright yellow hues. Fresh and balsamic scent. Very persistent flavour. ​ The "creamy" characteristic is not natural for lime honey, which would tend to crystallize in a more granular way or with large crystals. The creamy consistency is achieved through a controlled process called guided crystallization or honeying.​ Process: After extraction, the honey is kept at a specific temperature and then stirred slowly and steadily for an extended period. This mechanical process breaks down the sugar crystals as they form, preventing the formation of large crystals and instead encouraging the creation of microcrystals.​ Result: The result is a smooth, soft, velvety and easily spreadable texture, which maintains its consistency over time without becoming excessively hard or granular. ANDa consistency much appreciated for its versatility.
