Sumac is made by drying and pulverizing the fruits of a bush plant that grows locally in the Middle East. Sumac is a species of plant that belongs to the mahogany family and is widespread in Anatolia in the Middle East and especially in the countries with a coast to the eastern Mediterranean. Historically, it is known that before the discovery of lemon, the Romans used the sumac spice called Syrian sumac to give dishes a sour taste. ❖ Sumac is very popular in the Middle East and the Mediterranean. In countries like Israel, Turkey and Italy, dried, ground sumac is used as a flavor and color enhancer. These berries have an astringent taste reminiscent of lemons, but not as sour. In fact, before the lemons were imported to Europe, the Romans used these berries to add a tangy flavor to their meals. ❖ Our spectacular smoked sumac grows wild in the area around Gaziantep in Turkey, where it is not dried, but chopped and packed in salt for preservation. It has a light, sour, salty and slightly fermented taste and is one of our most popular spices with professional and private chefs alike. ❖ A classic Middle Eastern spice that you can replace with lemon juice in any recipe to add character and shine to salads, fish, meat or dips. It's also a perfect topping for anything from hummus to lettuce, fried vegetables, or meat to scrambled eggs. ❖ Refines your dips and salads with a sour lemon taste. Sumac (sumac) can also be used as a salt substitute. If it is added to the meat before cooking, the reaction creates a salty feel when it is cooked. Sumac has a varied taste profile, but also goes well with other spices such as allspice, chilli, thyme and cumin. One of the most common spice blends in which sumak is found is za'atar.
