SARDINE FROM THE AROUSA ESTUARY POSSIBLY THE BEST SARDINE IN THE WORLD NUMBERED LIMITED EDITION OF 1032 CANS They are caught inside the Arousa estuary, in the area closest to the town of Rianxo, during the months of July and August, when they have the most fat. They are caught at dawn, with an empty stomach, thus facilitating the cleaning or gutting process. It has a very delicate and soft texture on the palate, with a smoother and tastier meat. They have been resting in the can since June 2021 to elevate their flavor and texture, a real delight.
