King's Favorite No. 51

The fig was the favorite fruit of King Louis XIV. 

La Quintinie, his gardener, planted more than seven hundred fig trees of various varieties in the King's vegetable garden at the Palace of Versailles to satisfy the passion of the Sun King.

 COMPOSITION Oolong tea, dates, marigold flowers, fig, physalis. Brewing time: 2 -5 minutes Temperature: 80°C Time of day: afternoon OOLONG TEA It is also called semi-fermented tea, because its fermentation process is deliberately interrupted. 

Once harvested, the tea is withered. 

The leaves are then brewed in a room maintained at 22°C with a very high humidity level. 

Depending on the desired result, the fermentation time will be longer or shorter. 

The leaves are then roasted and then rolled, as for green tea. 

This technique generally requires more ripe leaves, which contain little theine making it an ideal afternoon or evening drink.
