Brewing time: 4-5 minutes Temperature: 100°C Time of day: all day Preparation: to make Indian Chai in the traditional way, you must put 1 glass of water and 2 glasses of whole milk in a saucepan. Once the mixture has come to a boil you can add the equivalent of two teaspoons of the Indian Chai No. 98 tea mixture and let it infuse for 2-3 minutes then add 3 to 4 spoons of sugar and let the mixture infuse one last time for another 2 minutes. 

All you have to do is strain it and serve it hot. 

Sugar is very important in this preparation because it acts as a flavor enhancer and allows all the spices to express themselves.
