Sauvignon Blanc IGP secret of lovers vintage “Le Rendez-vous” PREPARATION: The grapes are harvested very early in the morning, or even at the end of the night. 

They are quickly transported to the vat room to be pressed. 

Alcoholic fermentation takes place quickly in stainless steel vats at 18-20°C. 

Contact with air is avoided. 

Aging lasts a few months on fine lees at low temperature, in a carbonic atmosphere. 

There is no malolactic fermentation so that the wine retains all its freshness. 

Bottling is done quickly, Sauvignon blanc being one of our first grape varieties to be bottled.   TASTING NOTES: With a pretty pale yellow color, our Sauvignon Blanc is rich and aromatic, with intense fruit flavors and vegetal notes: redcurrant, passion fruit, green tomato, wild strawberry, lemon. 

It has floral nuances (honeysuckle), as well as a mineral "flint" scent. 

On the palate it is very fresh with good acidity and a rich and round finish.
