Nicaragua SJM San Pedro is made from the Trinitario varieties. It has a complex and gentle profile with yellow fruits, melon, apple cider, combined with a nutty note. SJM stands for San Juan de las Mulas (Saint John of the Mules), village which gave its name to the specificity fermentation protocol. The protocol has been developed over the years by the cocoa cooperative Flor de Pancasan, and in 2019 awarded the Cacao d'Excellence as 1 of the 50 best cocoa around the world.
