A MAISON DEHESA creation: Our black mandarin comes from certified organic farming. Inspired by black lemon, our mandarin offers a sweet acidity highlighting the bitterness of citrus. Our fermentation thus respects the first taste of this ancestral citrus fruit, in order to preserve the classic agreements around fish in particular. This wide and singular aromatic spectrum is made possible by a unique fermentation process presenting the mandarin in slices and in two parts: the dried skin for the bitterness and the fermented inner flesh for the acid.
