Côtes du Roussillon Villages Tautavel Appellation 2020 Vintage 40% Syrah 35% Grenache Noir 15% Mourvèdre 15% Carignan DESCRIPTION Our easternmost plots of the estate are located in the Côtes du Roussillon Villages Tautavel appellation area. Very beautiful terroir too, different from that of our plots located on the Maury side. These are hillside vines, clay-limestone. VINIFICATION Harvesting is carried out entirely by hand. We destem and crush the grapes before putting them in vats for a 24-hour pre-fermentation maceration. During alcoholic fermentation (at controlled temperature) we carry out light punching down with gentle and regular pumping over in order to achieve optimum extraction. Malolactic fermentation most often takes place in vats, more rarely in barrels. ÉAGEING 50% of the blend was aged for one year in 600- and 400-liter French oak barrels, 20% of which was in new oak. TASTING NOTES Bright garnet color. The nose is fresh with notes of red and black fruits (raspberry, redcurrant, blackberry, blackcurrant), liquorice and spices. Gourmet, intense and ample on the palate, with a melted woodiness and lovely notes of red fruits. Finish on black fruits and spices. PAIRINGS Grilled red meats, duck, sheep's cheese.
