IGP Côtes Catalanes appellation 100% Macabeu DESCRIPTION This wine comes from a plot of approximately fifteen-year-old Macabeu vines grown on a schist terroir. We generally harvest the grapes at the end of August, without pushing them too far to maturity, in order to obtain freshness and good acidity. Yields are low (20 hl/ha). This wine reflects the typicality of the Macabeu grape variety, an old grape variety used in Roussillon. VINIFICATION Harvesting is carried out entirely by hand. The grapes are then kept cold in a refrigerated truck to retain maximum freshness and aromas. Direct cold pressing of the harvest. The musts are then settled naturally in the cold. 36-hour pre-fermentation maceration. Then alcoholic fermentation for 2 to 3 weeks at a controlled temperature of 16-17°C in order to preserve the fruit aromas and minerality of the wine. TASTING NOTES Pretty, very pale color with green highlights. The nose is expressive, complex, very fine, predominantly floral, with some fruity notes of pear and a toasted hint. The mouth is very supple, ample, fruity with fat and lots of freshness. PAIRINGS Aperitif, seafood (shellfish, fish, scallops), white meats (lemon veal), goat cheese.
