Naturally Sweet Wine 100% Grenache Noir DESCRIPTION Pure Grenache Noir grapes harvested at peak ripeness from schist soils to create this naturally sweet wine typical of the Maury terroir. Mutage on juice allows us to obtain a wine profile based on fruit and freshness. VINIFICATION Harvesting is carried out entirely by hand. The black Grenache grapes for our Maury Grenat are the last harvests each year. We destem and lightly crush the grapes before putting them in vats for a 36-hour cold pre-fermentation maceration (10°C). Before the end of alcoholic fermentation (which takes place at a controlled temperature), we drain and press the tank to mutate the juice at a certain predefined density. The (neutral) alcohol thus added kills the yeasts before they have finished transforming all the sugars into alcohol, hence the presence of natural sugars in sweet wine. We prefer to mutate on juice and not on grains in order to obtain a wine profile based on fruit and freshness. TASTING NOTES Ruby color with purple highlights. The nose is fresh and fruity with notes of cherry, blackcurrant, spices with a hint of cocoa. The palate is supple, with a lot of freshness, the tannins are soft. It is a very expressive and very delicious wine.
