Maury Sec Appellation 2020 Vintage 65% Grenache Noir 27% Syrah 8% Mourvèdre DESCRIPTION This brand-new appellation was created in 2011 to showcase the exceptional terroir of the Agly Valley through dry red wines predominantly Grenache Noir from schist terroirs. They thus complement the existing range of natural sweet wines. We have taken a gamble on the reputation of this appellation by positioning our dry Maury at the top of the range. VINIFICATION Harvesting is carried out entirely by hand. The Macabeu grapes used in the composition of our white Maury are the last white grapes harvested each year. The grapes are kept cold in a refrigerated truck to retain maximum freshness and aromas. Direct pressing of the harvest is done with cold grapes. The musts are then settled naturally in the cold. After a 36-hour pre-fermentation maceration (at 10°C), alcoholic fermentation begins. Before the end of alcoholic fermentation (which is done at a controlled temperature), we ferment at a certain predefined density. The (neutral) alcohol thus added kills the yeasts before they have finished transforming all the sugars into alcohol, hence the presence of natural sugars in sweet wine. After mutage, the wine is cooled. ÉAGEING 100% of the blend was aged for over a year in demi-muids and 300- and 400-liter French oak barrels. Syrah is generally aged in new barrels. Aging in barrels for 1 year gave it a lot of finesse and complexity. TASTING NOTES The color is intense black with garnet and cherry red highlights. The nose offers a mineral woodiness, on morello cherry, with notes of garrigue. The palate is powerful and ample, developing notes of black and red fruits, blackcurrant, cocoa and cherry, with a hint of spice and liquorice. The woodiness is well blended and brings a lot of roundness. The tannins are silky. It is a wine with concentration but with a lot of finesse and a long chocolatey finish. PAIRING Grilled red meat dishes, game, lamb, and sheep's cheese.
