Côtes du Roussillon Villages Appellation 2020 Vintage 65% Mourvèdre 20% Grenache Noir 15% Syrah DESCRIPTION Like Pandora, a woman made of earth and water and endowed with all the gifts, this cuvée is rich, complex, and expresses the typical character of our Mourvèdre on schist. VINIFICATION Harvesting is carried out entirely by hand. We destem and crush the grapes before putting them in vats for a 24-hour pre-fermentation maceration. During alcoholic fermentation (at controlled temperature) we carry out light punching down with gentle and regular pumping over in order to achieve optimum extraction depending on the maturity of the grapes and the vintage. Malolactic fermentation most often takes place in vats, more rarely in barrels. ÉAGEING A quarter of the blend was aged for one year in 300-, 400-, and 600-liter French oak barrels, aged for one to three wines. TASTING NOTES The color is dark garnet. The nose is expressive with notes of mocha and toasted almonds. It is a wine with a beautiful structure, with fine and silky tannins and a lovely freshness. The palate is round and ample, dense, with a lot of freshness. There are spicy and fruity notes (red fruits, blackberry, strawberry), with a long spicy finish.
