The nonnette is a small French cake made from gingerbread, filled with marmalade and lightly topped with honey. For the record, the Nonnettes take their name from the nuns who in the Middle Ages made in the Monastery these small round gingerbread cakes filled with orange marmalade that can be replaced by apricot jam or any other jam.
