Arrowroot (Maranta arundinacea) "arrowroot" owes its name to the traditional use of this plant by the Arawaks. These Indians used it to extract poison from wounds caused by poisoned arrows. It is a very fine and very digestible starch. Binding and thickening arrowroot is used to prepare porridge, soups, sauces and desserts. RECIPE: Arrowroot is used as a binder for sauces. Recipe for prunes in sauce: Soak 1/2 cup of prunes for 2 hours. Cook in their water for 8 minutes, adding water if necessary. Dilute 1 tbsp. of arrowroot in 1/4 cup of cold water. Thicken the cooking juices with the diluted arrowroot. Serve hot or cold.
