Spelled is the ancestor of wheat, as it was once eaten by the Gauls and traces of which can be found dating back eleven thousand years. It is a cereal that does not support any input of fertilizer, requires very little water and is of great nutritional richness. Rich in vitamins and minerals, this semi-wholemeal spelled flour produces bread that does not crumble. RECIPE: Almond cakes: whisk 6 whole eggs with 200ml of milk, 200g of melted butter, 150g of ground almonds, 1 sachet of yeast, 1 sachet of vanilla sugar, 220g of brown sugar, 130g of brown flour, 80g of flour of rice and the zest of a lemon. Mix well, pour into small buttered molds and sprinkle with slivered almonds. Cook for 20 minutes at 200°.
