MILLET demeter (5 kg)

Millet is a very popular cereal in Asia and Africa that has a high protein content and high nutritional value. It is an important source of group B vitamins as well as vitamin E. Millet is also very remineralising, it is rich in magnesium, manganese, potassium, phosphorus, iron and zinc. It also contains lysine, an essential amino acid. Very digestible, millet does not contain gluten. Soak the millet the day before in cold water. Drain, rinse and steam for 15 minutes. Add a knob of butter, or first-press oil, salt. Patties: blend 1 cup cooked millet with 2 eggs, chopped herbs, sesame seeds, 100g tofu. Pour into small molds and bake in the oven at 180° for 20 minutes.
