The pinion is the fruit of the pine cone. Ideal with basil to make pesto, it can also be used in many other recipes. It is an excellent source of vegetable proteins, as well as minerals and trace elements (phosphorus, magnesium, zinc, manganese and copper) and vitamins (E and K). Can be used in sweet or savory salads, grilled in a pan to accompany rice/couscous. Crushed with garlic and basil, they make pistou or pesto. Used in desserts or creams, or to enhance sauces, as an accompaniment, in stuffings. They can be served mixed with strawberries!
