
Sesame seeds are a high source of fiber, minerals and trace elements. Sesame is very rich in calcium, phosphorus, magnesium, iron, zinc, manganese and copper. Sesame is very well known as tahini sauce but its small seeds enhance the flavor of many dishes. Gomasio recipe: (to be prepared at home in small quantities to avoid rancidity). : 2 cups of whole sesame and 1/10 to 1/20 of the volume of fine sea salt, lightly toasted in a pan and crushed (mill, suribashi or rolling pin). Store away from air & humidity. Sprinkle on cooked vegetables, salads, lightly salted soups.
