Sake is not wine. It is never aged in oak barrels where the wood would inevitably take over this non-tannic drink... But when it comes to sake, you should never say never… The Nambu Shuzo brewery has achieved the feat of aging its extremely fine grand cru for 12 months in French oak barrels. A performance that offers a unique flavor: it’s not wine, it’s beyond sake... On the palate, the cereal attack, very fatty, is intriguing. The length is persistent, the vibrations on the bitterness and the minerals stand out... A sake that blossoms into milky and pastry notes once decanted. The sommelier's opinion "The nose is stunning; I've already fooled colleagues by presenting it blind. On the palate, the fusion is fantastic: between wine and sake, with the typical bitterness of the latter in the finish. HAS marry like a good Meursault."
