The quality extra virgin olive oil ''Taggiasca'' comes from century-old olive groves only from ''Cultivar Taggiasca'', property of the olive grower's family (on the heights of Imperia 60 km from our House) for generations. The olives harvested with the oldest method, that is to say threshing by hand, are brought to the mill and pressed immediately within 24 hours of harvesting, to preserve and maintain their fragrance, their aromas and the important natural antioxidant and organoleptic characteristics. It is produced in small quantities, which vary from year to year. The can not only serves to embellish it but also to protect the oil from light, which facilitates the oxidation processes. Oil with a fresh taste of fruit, almond, moderately spicy. Cold worked at a temperature below 27°C with an acidity below 0.5%. Ideal raw on salads, pasta and rice, bruschetta, boiled potatoes, grilled vegetables, lentil soup, cabbage or spelled.
