Broken dinkel kernels are whole grains that are crushed into irregular pieces. The broken kernels can be used in bread - both light and dark - and for porridge. The dinkel kernels absorb a lot of moisture, so extra liquid may be needed if you want a soft and elastic dough. Spelled is one of the ancient varieties of wheat and is available in excellent quality in Denmark, as the Danish climate is well suited for growing dinkel. That is why Skærtoft Mølle gets our dinkel from farmers in southern Jutland, i.a. a local farmer on Als.
