FINE-GRAINED RYE FLOUR - 1 KG

The fine-grained rye flour is suitable for baking coarse bread. The rye flour contributes with a deep, slightly bitter taste and a dark color in the bread. Rye flour contains less gluten than, for example, wheat flour, and you should therefore supplement with wheat flour if you want to bake bread with a large volume. In addition, the leavening ability of rye flour can be increased by using sourdough as a leavening agent. Our rye comes from Danish farmers. Rye is available in excellent quality in Denmark, as the Danish climate is well suited for growing rye. The finely sifted rye flour can e.g. used to bake old-fashioned sifted bread with rye and wheat. Mix the finely sifted rye flour with finely sifted wheat flour in the ratio 40/60 to get a light bread with more substance and taste than a typical light bread.
