Artisanal cocoa butter - 12 kg

Cocoa butter handcrafted from cocoa beans of the “Nacional” variety from Ecuador. Cultivated by a group of farmers in the Esmeraldas rainforest, the cocoa trees are surrounded by lots of vegetation: lemon trees, coconut trees, banana trees, mango trees, tagüas, balsas... among others. This, in addition to contributing to the protection of the forest, gives a unique aroma to the chocolate produced from these beans. The farmers' group's goal is to defend the work of its member farmers through: - Selling their beans at prices that provide producers with a decent income, allowing them to earn a decent living from their work. -Improving farmers’ agroecological practices. -Continuous improvement of the quality of cocoa beans, through monitoring of plots, trees, fruits, post-harvest processes (fermentation of beans, drying, etc.). SolAlter is thus part of an approach of respecting the work of farmers. There is no room for large producers in this group. After the beans arrive, they are transformed into a very fine cocoa paste, which is then pressed at very high pressures in order to separate the butter, the remaining product being cocoa powder. This is done by an artisan chocolatier in Drôme. The process is carried out slowly, carefully, and above all without Potassium Carbonate or deodorization. This is to obtain the best aromatic notes from this exceptional cocoa. The advantage of working with an artisan is that they take care of these beans. SolAlter cocoa butter is prepared without the addition of Potassium Carbonate and without deodorization.
