This balsamic vinegar is produced exclusively from grapes from the vineyards of Modena and aged in oak barrels for ON THE QUAYS. Its sugar/acidity balance is quite remarkable. It benefits from the IGP designation which guarantees a minimum level of concentrated grape must and wine vinegar, as well as aging for at least 2 months. The SUR LES QUAIS cap with integrated anti-drip pourer allows for efficient dosing onto the plate or dish. We work exclusively with Maison Malpighi in Modena. Malpighi is an Italian producer of premium balsamic vinegars. Based in Modena, a city renowned for the production of balsamic vinegar, Malpighi is a family business that has been producing balsamic vinegar since 1850. The company is known for its artisan tradition and passion for quality, using traditional production methods to create exceptional balsamic vinegars. The production process begins with selecting the region's ripest and tastiest grapes, which are then slowly cooked to concentrate their natural flavor and sweetness. The cooked grapes are then aged in barrels of different woods, such as oak, cherry and mulberry, for a period of up to 25 years. This barrel aging allows the balsamic vinegar to develop complex aromas and rich flavors, with notes of dried fruits, caramel and vanilla. The result is a balsamic vinegar of exceptional quality, which is appreciated by gourmet chefs around the world. Malpighi offers a range of balsamic vinegars of different qualities, from basic balsamic vinegars to balsamic vinegars aged up to 25 years. We use it in all our restaurant recipes for deglazing and salad dressing. Taste the difference compared to commercial balsamic vinegars! Acidity: 6% Origin: Italy
