The Elios project was born in 2015 when the two friends Nicola and Guido, both tired of their jobs and wanting to work freely and freely with nature, took over their fathers' vineyards, who until then had sold all their grapes to large wine producers, and from that theirs produce their own natural wine. Grillo is one of the most interesting native Sicilian grape varieties, but one that is difficult to cultivate and maintain. The very name "Grillo", which means grasshopper in Italian, indicates the "bouncy" character of this grape. Modus Bibendi Grillo is a natural wine made from handpicked Grillo grapes. The grapes are gently pressed and the must is aged in stainless steel tanks. The aging is done "sur lie", the wine is kept turbid to allow it to age better and more naturally. Elios Modus Bibendi Bianco has a complex bouquet reminiscent of green tea, balsamic notes and typical Mediterranean plants such as sage, thyme and mint. In the mouth it tastes pleasantly fresh and mineral, which leads to a remarkable drinking flow.
