Applications: Our Food Service Salsa Tartufata is a recipe designed for restaurant owners. This sauce is made from sliced mushrooms and 1% summer truffle in sunflower oil, which we have combined with corn starch and vegetable fibers to give it a velvety texture comparable to an emulsion. Another advantage, and not the least, is that it is extremely low in lipids and carbohydrates, which allows it to be combined without restraint with other fatty and/or sugary ingredients. Its wide range of uses and very competitive price make it ideal for adding truffle to pizza bases, burgers, pasta, risottos, and even truffle paninis.
