The product is obtained from anchovies caught in the Cantabrian Sea in spring when the fish approach the coast to spawn. A few hours after catching the fish is selected based on size and subsequently processed by expert hands in the ancient artisan way. The anchovies initially undergo a controlled maturation process in a highly salty environment, then they are filleted and cleaned manually one by one and then placed in cans and covered in oil before closing.
