Sake brewed by a small sake brewery located in Western Japan, in Okayama. The first nose is aromatic with delicate notes of sweet almond and cooked rice. We also feel a tangy side and a fresh cream aspect. There is also a round side (chestnut, bread). On the second nose the aromas are more airy. The attack is fresh with a hint of bitterness. The mid-palate is spiced with white pepper. The finish is also spicy, tense, yet with roundness brought by the sweetness. The very present umami encompasses the entire tasting. Alcohol content: 15.5% Serve chilled (12°C) or at room temperature (18°C) in a wine glass.
