For this gin, Matsui incorporates roses and lilies into a base composed of sake marc, yuzu, shiso, plum, etc. The first nose is very fragrant, intense, very pure. We find juniper berries but we also smell citrus notes. When aerated, it is still intense but delicate. It’s charming with a floral side that is quite present. There is also an almost vegetal side like green tea (sencha) and orange blossom. The palate is fresh with a very nice, almost tangy attack with a hint of sweetness. There is a very discreet little bitterness which gives it some pep. It's peppery with notes of yellow rose, peppermint and ripe lemon. The presence of juniper berry is less noticeable in the mouth.
