A surprising rum made with wasanbon, a premium Japanese cane sugar commonly used in traditional pastries. The first nose is intense, powerful, with notes of brown sugar, black honey and very ripe banana. With a little aeration, we have almost vegetal notes, a little smoky and peppery. The attack is fresh, intense with notes of honey and earth. We also perceive hints of smoke. We find classic notes of rum even if it is quite raw, quite authentic. We feel the roughness of a traditional white rum with a slightly fiery (flamed alcohol), honeyed, animal side. The finish is slightly round with a powerful alcohol. At the end of the tasting we are on beeswax. Produced by Matsui House (founded in 1726), in Kyoto City, Japan.
