A sake brewed in southern Japan, in the Saga region, on the island of Kyushu. The first nose is intense with fruit, it is pretty and delicate. There is a lovely freshness that emerges. The attack is mellow with tangy fruits like apple. Aromas of brown rice develop in the mid-palate over soy and mushrooms, the umami gains momentum. The finish is slightly bitter, accompanied by notes of yellow apple and star fruit. Alcohol content: 15.7% Serve chilled (12°C) or at room temperature (18°C) in a wine glass, or warm (45°C) in an ochoko. Pairing ideas: Mushroom omelet, veal paupiette with mushrooms and tomatoes, chicken in a pot, beef Stroganoff, trippa alla Fiorentina.
