A surprising sake, brewed from white koji usually used for shochu. The first nose is discreet with lime zest, undergrowth and dried rose. The second nose is more aromatic but remains delicate, there is a nice freshness. The attack is fresh with a very nice acidity that is noticeable from the start of the tasting. There are notes of lime and lemon zest, banana and yellow apple. The acidity continues into the finish. The mid-palate alternates with a slight bitterness that gives pep and a discreet umami. The finish is clear, clean, there is a fine salinity at the very end of the tasting and a hint of menthol. Alcohol content: 13% Enjoy in a wine glass, chilled or at room temperature.
