Over time, a knife wears out, making it less sharp, including Xinzuo knives. Burrs will appear on the edge and you will notice that cutting is less easy than before. Keeping the knife sharp can be done with the help of a sharpening steel and/or a sharpening stone (or grinding machine). A sharpening steel is intended to regularly remove burrs from the edge in order to make the knife sharp again. However, after a lot of wear and tear, the sharpening steel will no longer be sufficient. Then it's time to sharpen the knife.
