 The fleshy, reddish calyxes of hibiscus sabdariffa flowers are used in cooking to prepare refreshing drinks and infusions. 

These calyxes are rich in citric acid, which gives them a tangy and slightly sweet taste. 

In Africa and other parts of the world, a popular drink called “bissap” is made from the calyxes of hibiscus, often sweetened with sugar or honey and sometimes flavored with mint or other spices.
