Lupine flour when compared with classic wheat flour has a very high protein percentage. Compared to wheat, lupins contain three times more vegetable protein and this makes their flour a very suitable food for those who follow a vegan, vegetarian or sports diet. The gastronomic application of lupine flour essentially concerns the completion of wheat flours. By adding a percentage of this product it is in fact possible: complete the pool of essential amino acids increase total proteins increase fiber decrease total carbohydrates decrease the glycemic index and increase iron.
